Jos always come home hungry after work. Perhaps his job takes so much of his energy. This vegetable puff was just a little inventive idea to fill his hungry after-work tummy. It surely spices up his afternoons!
Start to finish: 1 hour
Ingredients
Puff:
- 200 gr flour
- 1/2 cup milk
- 2 eggs
- 1/2 teaspoon green flakes (dried herbs for salad or salsa pasta)
- 1/8 teaspoon salt
- 1/3 cup grated Parmesan cheese
Vegetable mixture:
- 1 tablespoon cooking oil
- 6 slices precooked bacon or salame, chopped
- 1 onions, chopped
- 1 tablespoon chopped red bell paper (paprika)
- 2 tablespoon chopped carrot
Sauce:
- 1/2 cup mayonnaise or tomato sauce
Procedure
Heat oven to 220°C. Grease a heat-proof cooking dish (5x15cm) with butter.
(Instead of cooking dish, you can also use mini muffin cups, so you will have about 24 small puffs).
Prepare a frying pan on medium fire. Put the cooking oil, saute all vegetable mixture on the pan until they look brownish and smell good.
In medium bowl, stir flour, milk, eggs, herbs, grated Parmesan cheese and salt with whisk or fork until blended. Put the sauted vegetable mixture and stir until evenly mix. Pour this mixture in the cooking dish or mini muffin cups. Put in the preheated oven.
Bake for 20 minutes or until toothpick inserted in center comes out clean and tops are light brown. Cool 5 minutes. With a thin knife, loosen sides of puff from dish remove to cooling rack.
Serving tips :
Cut the puff into square shapes of 2x2cm.
Top each warm puffs with mayonnaise or tomato sauce.
