Pasta Salad

This salad is very easy to make, an easy and simple dish but very healthy and quick to prepare, even if you have to feed a big group of hungry people. Since you need to do a lot of cutting, it will be nice if you can ask someone to help you do that.





Serving: 6 people



Materials :

300gr your choice of pasta (you can use either macaroni / orecchiette / conchiglie / farfalle)
2 eggs
200gr potatoes, peel the skin and cut into small chunks
3 carrots, cut into small cubes

200gr sausages, cut into small cubes
1 onions, cut into small cubes
1 tablespoon of oil, to fry sausages and onions 

2 cucumbers, peel the skin, remove the seeds, cut into small cubes, wash under cool running water, drain  and put them in the fridge.
100gr of pickles, cut into small cubes, put in the fridge.

(these two ingredients are ready to use and you can buy them in the local market)
150gr sweet corns
150gr green peas or spring onions (daun bawang segar bagian yang hijaunya, dipotong kecil-kecil untuk campuran)


Dressing:

2 tablespoon mayonnaise
4 tablespoon olive oil
1 teaspoon dried basilicum
1 teaspoon thyme
salt
pepper


Cooking Directions:

Pasta
Cook the pasta until the al dente stage, meaning there’s a nice bite to it, and it’s not mushy.  This step is VERY important.  As you drain the pasta, run cold water into your strainer.  pour the pasta fairly slow the cold water gets all of it, and once it’s all in the strainer, carefully mix the pasta while the cold water cools it completely.  This will stop the pasta from continuing to cook while in the strainer.  Let the pasta drain really well while you prepare the other ingredients. 

Eggs and Carrots
While the pasta is being prepared, put the eggs in a small pot, cover with water, and bring to a boil. Do the same with the carrots in another small pot.  
Once at a rapid boil, turn off the heat and keep the eggs and the carrots covered for five minutes.  After five minutes, set them in cold water also so you’ll be able to handle them once the other items are prepared.

Potatoes
Put potatoes in a bigger pot, cover with water, and bring to boil until all potato chunks are soft enough to be mashed. Drain the potatoes and smash it roughly. Add a pinch of salt for the taste. Let it cool down. 

Sausages and Onions
Put 1 tablespoon of vegetable oil on the frying pan, heat it up, fry the sausages until a little brown, add the onions, fry and stir for about 3 minutes until the onions turn a bit brown. Turn off the fire, put it aside to cool down.


To make a dressing :
Add all ingredients in a bowl, stir with a fork until evenly mix.


Serving Directions:

Gently mix all of the ingredients (including cucumbers, pickles, sweet corns and peas/spring onions) together in a large salad bowl.  If you mix too vigorously, you’ll mash all of your hard work.  Once it’s well blended, give it a taste.  

Keep in mind if you put it in the refrigerator for a couple of hours, the flavours will have time to blend, and this salad only gets better with age.  If you find the salad a bit dry still, yet flavourful enough, add a bit more of dressing. 

Feel free to add more salt and pepper until the taste meet your standard.
